Ingredients of the brava sauce

Garlic

A food with many health benefits as it reduces cholesterol levels, is a natural antibiotic and antioxidant. To prepare all our aioli sauces, at Choví we use purple garlic and we use it fresh and whole so it does not lose its aroma.

La Brava Sauce

Una reinterpretación de la receta clásica. Es una salsa refrigerada elaborada con ajo, tomate, aceite, pimentón dulce y yema de huevo. Su textura es cremosa, similar a un alioli pero con un toque picante (tiene cayena).

Choví presenta la salsa La Brava en formato tarrina de 150 gramos con la peculiaridad de que puede calentarse sin cortarse, lo que facilita su dosificación.

Perfect with chips, boiled potatoes, meat or roast vegetables.

Brava Sauce

The essential element to enjoy authentic patatas bravas. Our Patatas Bravas sauce has character, a spicy touch and a unique texture. Made with oil, garlic, tomato and spices.

Patatas Bravas Choví sauce comes in two formats. The 250-millilitre squeeze bottle is an ergonomic, convenient and hygienic container thanks to its valve cap. The one-kilo bucket is perfect for catering establishments that want to offer their customers authentic potatoes.

Salsa brava for the hotel and catering industry

Made with tomatoes, vinegar and a special touch of cayenne.

It is a sauce similar to ketchup but spicy and its format - 1,850 gram jar - is ideal for use in the catering trade.

Perfect for preparing good patatas bravas but also to add a special touch to salads, omelettes, starters or meat stews.

How is salsa brava made?

SALSA BRAVA

It is easy to prepare, although it requires a little more time than other sauces, such as mayonnaise.

Su elaboración es sencilla aunque requiere de un poco más de tiempo que otras salsas, como la mayonesa.

There are variations in the ingredients of the salsa brava, especially with regard to the degree of spiciness, although the basics are the basics and, basically, the recipe is as follows:

  • One tablespoon of sweet paprika
  • One tablespoon of hot paprika
  • Two tablespoons of flour
  • 250 ml stock (chicken or ham)
  • One medium onion
  • 2 cucharadas de aceite
  • A clove of garlic

Cayenne, cumin, tomato or white wine can be added to these basic ingredients.

LA BRAVA SAUCE STEP BY STEP

1 Chop the onion and garlic and fry them in oil. Add the paprika.

2 Add the flour and a minute later the stock. Bring to the boil until it has the texture of a "velouté".

3 Blend with a blender. If you want it to be more liquid, pass it through a fine sieve.

Curiosities of bRAVA sAUCE

The characteristic reddish colour of salsa brava does not come from the tomato, but from the paprika. It is a product whose consumption is much more widespread in bars and cafés than in the private sphere and one of the typical tapas of Spanish gastronomy. In fact, there are places whose speciality is patatas bravas with an infinite number of variations in their recipes. For example, in the Levante area, it is usually served with aioli or a garlic sauce.

The popularity of patatas bravas in Spain is such that the UN itself included them in 2008 in a list of potato recipes, recognising them as a typical dish of Spanish gastronomy.
