The classic Aioli you know and love. This traditional recipe is our flagship product, made with eggs, purple garlic, and oil. A sauce you can enjoy with a rice dish by the beach or at a barbecue with friends, or simply spread on bread while you wait for your food. Once you start eating it, you can’t stop.

Origins

Aioli is one of the oldest and most classic sauces in the Mediterranean area. There are reports of aioli recipes as early as the beginning of the 10th century. Spain and France received it from the Romans, who learnt it from the Egyptians. It is a very popular sauce, also known as ‘ajoaceite’, which can be used for cooking or accompanying all types of food. It's made with garlic, oil, egg, lemon and salt mixed with skill, technique and tradition in a classic yellow ceramic mortar. The result? One of the mother sauces of the Mediterranean cuisine. Suggested use

Aioli is the oldest “culinary monument” in the world. It is used in numerous preparations and can accompany grilled meat, rabbit, chicken, fish, rice, potatoes… It can also be eaten as a bread spread or used in any other dish for a special touch. When you try Choví’s aioli, you realise that it is not mayonnaise with garlic but a sauce matching the flavour of the aioli made by our grandparents: fresh, creamy and intense.
